Ingredients
RITZ CHICKEN:
– 2 packets of Ritz crackers
– 2 pounds boneless chicken breasts
– 1 tablespoon of salt
– 1 cup all-purpose flour
– 1 cup buttermilk
– 3 tablespoons butter
GARLIC MASHED POTATOES:
– 1 whole garlic bulb
– 1 tablespoon olive oil
– 4 tablespoons salt (divided)
– 3 large Russet potatoes
– 6 cups water
– 2 cups 2% milk
– 4 tablespoons butter
– 2 tablespoons chopped chives
Directions
– Place Ritz crackers in a plastic bag and crush them. Season chicken breasts with salt. Prepare three shallow bowls with flour, buttermilk, and melted butter, and crushed crackers. Coat the chicken in this order and bake.
– Roast garlic with olive oil and salt. Boil and mash potatoes, adding milk, butter, roasted garlic, chives, and salt to taste. Serve chicken on top of mashed potatoes.
