Ingredients

– 1-1/4 cups plus 2 teaspoons packed brown sugar
– 1/2 cup olive oil
– 3 large eggs at room temperature
– 2 tablespoons 2% milk
– 2 teaspoons vanilla extract
– 1 cup all-purpose flour
– 3/4 cup almond flour
– 2 teaspoons baking powder
– Dash of salt
– 3 medium red pears, peeled and thinly sliced
– 1/4 teaspoon ground cinnamon
– Optional sweetened whipped cream

Directions

To begin, preheat the oven to 325° and grease a 10-inch springform pan, placing it on a baking sheet. In a large bowl, mix 1-1/4 cups of brown sugar, oil, eggs, milk, and vanilla until well combined. In a separate bowl, whisk together the flours, baking powder, and salt, then gradually add this mixture to the sugar mixture. Transfer the batter to the prepared pan, top with sliced pears, and sprinkle with the remaining 2 teaspoons of brown sugar and cinnamon. Bake for 55-60 minutes until a toothpick inserted in the center comes out clean. Let it cool completely in the pan on a wire rack. Optionally, serve with whipped cream.
