DoubleTree by Hilton Unveils ‘piebird’ Dining Concept

DoubleTree by Hilton has introduced a fresh restaurant and bar concept named piebird, which will be gradually introduced to properties across the United States later this year. piebird, crafted and designed by Hilton’s global consultancy, StiR Creative Collective, will offer a modern twist on American classics and specialty pies.

The initial piebird location is set to open in fall 2025 at DoubleTree by Hilton Hotel Nanuet in Nanuet, New York, followed by a second location at DoubleTree by Hilton Hotel Asheville – Biltmore in Asheville, North Carolina, in early 2026, with more locations to come.

Brand leader of DoubleTree by Hilton, Shawn McAteer, expressed that piebird aims to capture the essence of home and nostalgia, continuing the tradition of providing warm hospitality and caring service for travelers.

StiR Creative Collective, Hilton’s in-house food and beverage development arm, is reshaping hotel dining experiences not only in the Americas but also in Europe, the Middle East, and Africa (EMEA). The collective has recently launched various projects, including Leonessa, Ayda, and multiple dining experiences at different Hilton properties.

The inspiration behind piebird’s name comes from ceramic figurines used in baking pies, while the menu will feature a mix of classic dishes with modern twists. Guests can expect a variety of breakfast, lunch, and dinner options, as well as seasonal pies and signature cocktails.

The design of piebird will emulate a relaxed atmosphere with warm textures and a calming color scheme, reflecting the comfort and warmth associated with DoubleTree by Hilton. Vintage-inspired artwork and objects will also be incorporated into the design.
