Instructions for making a classic pasta dish:
Step 1: Begin by heating 6 quarts of water in a large pot. Once the water starts steaming, add the required amount of salt and cover the pot with a lid to bring it to a boil faster.
Step 2: While waiting for the water to boil, prepare the ingredients. Slice the guanciale, bacon, or pancetta into strips and grate the Parmesan or Pecorino Romano cheese.
Step 3: In a bowl, whisk together the eggs, cheese, and black pepper to make the sauce.
Step 4: In a separate pot, cook the pork until crisp, then remove it and set it aside.
Step 5: Save some of the rendered fat and discard the rest.
Step 6: Cook the spaghetti in the boiling water and reserve some of the pasta cooking liquid.
Step 7: Add some of the cooking liquid to the pot with the pork fat and bring it to a boil before adding the drained spaghetti.
Step 8: Cook the pasta until al dente and the liquid has reduced.
Step 9: Combine the egg mixture with the pasta water and add it slowly to the pot, stirring constantly until a creamy sauce forms.
Step 10: Mix in the pork and serve the pasta topped with pepper and cheese.
