The hoatzin, resembling a pheasant, stands out as the sole bird type that undergoes food fermentation, a unique digestive process that also labels it as the most odoriferous bird globally. Originating from the remote regions of the Amazon, this peculiar bird exhibits extraordinary characteristics – its offspring are born with clawed wings, it belongs to a lineage that dates back around 64 million years, and it sustains itself solely on plants, a behavior uncommon among birds. Yet, what truly distinguishes this living anomaly is its distinctively unpleasant smell, leading to its moniker as the ‘stinkbird’. Notably, the hoatzin possesses a foregut fermentation mechanism akin to that of cows, emitting substantial methane quantities through continuous burping. These malodorous burps and feces with an especially pungent aroma contribute to the hoatzin’s unique scent.

Typically, birds possess a crop, a pouch near the throat for storing food and feeding chicks, whereas in the hoatzin, this organ is enlarged and functions as a fermentation chamber for the consumed leaves. Specialized bacteria inside the crop break down the ingested foliage, a process that spans 45 hours for complete digestion. Throughout this prolonged digestive cycle, the bird expels gases via burps, resulting in its characteristic manure-like smell. The hoatzin’s enlarged crop limits space for flight muscles, explaining why adult birds can only sustain short flights, mainly for inter-tree movements, relying on awkward hopping and climbing between branches, aided by their wing claws.

The hoatzin’s repugnant odor serves as a deterrent against hunters and predators, although some, such as the Great Black Hawk and the weasel-like Tayra, are undeterred by the stench when seeking a meal. Notably, in 2024, researchers delved into the genomes of over 360 bird species, constructing a comprehensive family tree of major bird groups; however, the hoatzin, alongside shorebirds and cranes, did not align with any specific groups.
